Delish.com Cranberry White Chocolate Rice Treats

The other day, I accidentally came across this site called Delish.com. It’s a place filled with yummy treats and delish dishes that are easy to make. There are definitely more than a handful that I wouldn’t even give a go at, but there were many others that caught my eye. Since the recently required enforcement on caring for my system by cutting out gluten, and soon, cutting out sugar [by choice], it seemed more of experiment to attempt different options meeting my dietary restrictions.

The first one is Cranberry White Chocolate Rice Krispy Treats. The recipe called for raspberry jam which was substituted with strawberry preserves. As well as red food coloring, which was nixed altogether. From prep to finish, before cooling and trying, it took roughly half an hour. As you get better, and begin to memorize the steps and recipe, I’m sure time will cut in half to its guesstimated time.

Loaded Breakfast Skillet, the second dish attempted, doesn’t have process photos in fear of completely screwing up, was not as easy at it seemed. Yes it’s a one skillet recipe, but for one just coming into her own with cooking, it was very nerve-wracking. The easiest part was digging the holes and dropping in the eggs. [I know, weird right?!]

Also, the recipe is said to feed four. Freaking lie. There was and still is, so much left over. I mean, I did add mushrooms and red bell peppers to mine, but still, it’s not going to feed only four.

Another side note, it’s best to eat all off this gooey DELISHness in one sitting (with many friends, obvs) because the day after isn’t as good. That gooeyness seeps up into the potatoes, the eggs harden, the cheese isn’t as stringy…just not the same as the day of.
